It is a mistake to think you can solve any major problems just with potatoes. I she does get annoying after a while only if you do not change how often she talks, you can edit almost everything. I would stick with sofia over serana. To me knowing she has things to say about 80% of the things u are gonna do is great.

SDA is in my opinion the best follower mod you can have. It expands the relationship between serana and the dragonborn in an immersive way. I would also suggest to look at the mods the mod author suggests like seranaholic, deadlier serana and a custom armor mod of your choice for her.
