I've intentionally delayed putting up defense towers, automated guns, etc and mobs have remained relatively small and pests not as powerful. There will be stronger mobs eventually, but there does seems to be some calculation to mob size & strength based upon your current defense strength.

You don't need to enclose your entire base with walls, just an area, with an open gate, where you will move your survivors to when you get attacked. And you need to move ALL of your survivors there if you want them to come to you through the open gate. As far as dealing with the ranged mobs, kill them first.
