"Bite" is a type of wound, if you have all infection settings off then you won't be infected with the Zombie virus. There is a difference between Zombie infection and normal wound infection though. If you have no infection enabled then a bite will still cause a bad wound and may show as "Infected" but you won't actually turn into a zombie.
