I think it's really important with ultra greatswords that you understand the entire moveset, attack and recovery times for different moves and what attacks you can combo into other attacks. You actually have to work hard to be good with UGS's, unlike katanas (where you can get away with only using R1 and running R1). Same goes for most big weapons.

While I don't necessarily disagree, I like the Pursuer's Ultra Greatsword more. For a straight strength-focused build, the Greatsword is probably the better choice though. Pursuer's requires 8 more in dex, and scales great with strength and decent with dex, while the regular Greatsword scales amazingly with strength and barely with dex.
