I had a blueprint weapon in the insured slot and could never spawn with it or any other gear. Removed the blueprint and just made a new gun build from scratch and haven't had the issue since. You equip the insured weapon (M4 with an optic in this case), and you load into a lobby and it shows your operator with no gun. You back out to re-equip your insured weapon but you can’t click on it. If you DO NOT own MW2 and only have Warzone 2.0, press DELETE ALL and boot the game. It should re-sync all your data, nothing is lost, and you should be able to use whatever gun you want in DMZ.
