May 2, 2021 · Veteran restaurant owner Ron Pellegrino bought Paradise Cantina back in 2018 and immediately found success, taking in over $1.2 million in his first year of operation. Ron was planning to open two additional locations in the Las Vegas area, until the Covid-19 pandemic hit Las Vegas in 2020, when Ron’s hope for his best year ever evaporated.
